Tofu Katsu and Cake

One of the meals I miss since being vegan, is the Japanese dish Kastsudon. I figured, why not try and make the cutlet part out of tofu? I froze the tofu and thawed it out to make it a bit chewier and then covered it in panko with the help of soy milk. The panko didn't stay on as well as I liked so I'll have to try a few more additions to make it work a bit better. I used a spicy curry with mushrooms for the sauce. I was very happy with how the meal came out and will definitely try it again soon!

I also mad a quick and simple pineapple upside down cake. Everyone seemed to get to it before I could take a picture however...

Potato Curry and Cranberries

I made a potato curry with brown rice the other day. It was pretty good, but I feel that it would taste better with peas in it to give it a bit more flavor. I was also strangely craving cranberry sauce and had a can of it in my cabinet. It has to be one of the most unhealthy type of cranberry sauce, but I figured why not. So I had some :)

Strawberries and Japanese Curry

I know what you're thinking. This is the 2nd curry dish I've had in a short amount of time and every meal I’ve made has some rice in it. I promise you, there’s more to come. I just happen to love rice and curry being brought up in an Asian home and find its one of my weaknesses. ☺

I cut up a bunch of fresh strawberries for a snack while the guys were playing video games. I set it down on the table and it was gone within a few minuets. I was very sad I only got a few ☹



For dinner, I made the Japanese curry with potatoes and mushrooms. There is pita bread to go with it, as it is always perfect for dipping.

Red Thai Curry and Mango Rice

Yesterday, I had very little vegetables left for cooking. I figured, I might as well throw things together and make something new. I had been watching the Daily Vegan, and had the urge to make a spicy curry with mango to add a sweet flavor.




The curry has mushrooms, carrots, tofu and bamboo shoots, while the rice had been cooked a bit in coconut oil with mangos mixed in.
